Eggless Christmas Pudding

Christmas pudding is a steamed rich fruit pudding served during the dinner on Christmas. I have read about the Christmas pudding in an Agatha Christie novel in which Poirot visits a house during Christmas and solves a mystery. The ruby which he came in search of would be found in one of the puddings served on Christmas. I never thought that I will be making Christmas pudding. When I was going through my book shelf I saw this novel and decided on doing it at home. Traditionally pudding has eggs, suet ( a type of fat from animals) and alcohol. I decided to make an eggless, suet free, alcohol free pudding at home. I saw a vegetarian version of the pudding at Titli's Kitchen but still it had eggs. So I adapted Titli's recipe according to my preference and ended with  a flavourful, delicious, moist, rich pudding. This is steamed for 6 hours and once cool you need to remove it from the mould. I am having this pudding mould for so many years but never once used it. And finally it came to use and I am so so happy for recreating this in my kitchen.



Recipe Adapted From Titli's Busy Kitchen
Makes one pudding in 1 lt pan
Ingredients:
Brown Sugar-250gm
Butter-125 gm
Curd/ Yogurt-1/2 cup
Candied Orange Peel-100 gm
Golden Raisins-60 gm
Black Raisins-60 gm
Dates-125 gm
Apricot-50 gm
Flour/ Maida-75 gm
Baking Soda-1/2 tsp
Ground Ginger-1/2 tsp
Orange Juice-60 ml
Bread Crumbs-140gm

Procedure:
1.Cream together butter and brown sugar.
2. Add curd and beat until creamy.
3. Add in all the chopped dates, raisins, black raisins, chopped apricots and chopped candied orange peel.
4. Add the orange juice and mix well.
5. Sift together flour, baking soda and ginger.
6. Add it to the mixture and fold to incorporate.
7. Finally add the bread crumbs and mix well.
8. Grease a 1 litre pudding pan and place a small circle of butter paper at the bottom and grease it also.
9. Transfer the batter to the pan and press it and level it.
10. Place another circle of greased baking paper circle on top.
11. Cover with a folded foil.
12. Secure with a thread and trim the excess foil.
13. Place it in a steamer and steam the pudding for 6 hours.
14. Check the water level regularly.
15. Once done, remove from the steamer and allow it to cool completely.
16. You can also unmould it the next day.
17. Remove the thread and foil.
18. Remove the paper on top.
19. Place the serving plate on top and flip it.
20. Gently remove the mould leaving the pudding on the plate. Remove the butter paper on the top.
21. Garnish with cherries and serve.. 




Cream together butter, sugar and curd.




Add the fruits and orange juice.




Add flour mixture.




Add bread crumbs.




Mix well.




Grease a pudding mould. Line with a butter paper at the bottom..




Fill with batter and level.




Place a greased butter paper on top.




Fold a foil like this.




Place it on the mould, secure with thread and trim.




Steam the pudding for 6 hours.




Remove the foil and butter paper when completely cool.




Flip it on to a serving plate.




Remove the butter paper on top.




Garnish with cherries and serve...
