Mathri

Mathri is a savory snack form Rajasthan. Today is the fourth day of Blogging Marathon#9. When going through the recipes of Jayasree who was a nice fellow blogger, I found this. First I thought of baking it, but as I wanted to follow her recipe exactly, I deep fried it. It was so crispy and flaky. It tasted delicious. This post is to say that I am part of Tribute Jayasree. See Lataji's post for details. We will miss you Jayasree. We all pray for your family members who are going through a tough situation.

Ingredients:
Wheat Flour-2cups
Maida-1cup
Oil-3/4cup ( I used Olive Oil)
Salt-to taste
Carom Seeds-1tsp
Kasuri Methi-2tbs
Red chilly powder-1/2tsp
Black Pepper Powder-1/2tsp
Warm Water-1cup
Turmeric- a pinch
Oil-for deep frying

Procedure:
1. Mix wheat flour, maida, salt, red chilly powder, pepper powder and turmeric.
2. Heat oil and add it to the flour. Mix it with a spoon to resemble bread crumbs.
3. Add crushed kasuri methi. Use warm water to bring everything together.
4. You may not need the whole cup. Add little by little and stop when the dough comes together. Do not over knead.
5. Divide it into 4equal part. Roll each portion into a thick circle. Cut out circles or any other shape with a biscuit cutter.
6. Prick holes with a fork to avoid puffing.
7. Deep fry the mathris until golden on both sides.
8. Store in airtight jar once cool.
9. Enjoy with a cup of coffee.


Take the flours and powders in a bowl

Add hot oil in the centre

Add kasuri methi

Add water to bring all the ingredients together

Roll into a thick circle and cut out shapes

Prick with a fork

Deep fry until golden
